  • ¼ tsp nutmeg (optional, for warmth)
  • 2 tbsp lemon juice (prevents browning and balances sweetness)
  • 2 tbsp all-purpose flour (for thickening)
  • 1 tsp vanilla extract
  • 1 tbsp butter (cut into small pieces, to dot over the filling)

For Brushing & Topping

  • 2 tbsp milk (for a golden crust, use plant-based milk for vegan option)
  • 1 tbsp sugar (for sprinkling, optional)

Instructions

Step 1: Prepare the Pie Crust

  1. In a large mixing bowl, whisk flour, salt, and sugar.
  2. Add cold cubed butter and cut it into the flour using a pastry cutter or fingertips until the mixture looks like coarse crumbs.
  3. Slowly add ice water, 1 tablespoon at a time, mixing gently with a fork until the dough just comes together.
  4. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and chill for at least 30 minutes (or overnight for best results).

Step 2: Make the Apple Filling

  1. Peel, core, and slice the apples into thin slices.
  2. In a large bowl, toss apples with sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, and vanilla extract. Mix well and let sit for 15-20 minutes to release juices.

Step 3: Roll Out the Dough

  1. On a floured surface, roll out one dough disc into a 12-inch circle (about ⅛ inch thick).
  2. Gently place the rolled-out dough into a 9-inch pie pan, pressing it down lightly. Trim the edges, leaving a slight overhang.
  3. Pour the apple filling into the pie crust, spreading evenly. Dot with small butter pieces.
  4. Roll out the second dough disc and place it over the filling. Trim and crimp the edges together. Cut small slits on top for steam to escape. (Alternatively, make a lattice top by cutting strips and weaving them.)

Step 4: Bake the Pie

  1. Preheat oven to 375°F (190°C).
  2. Brush the top crust with milk and sprinkle with sugar for a golden finish.

  4. If the crust browns too quickly, loosely cover with foil for the last 15 minutes.
