Classic Creamy Potato Salad Recipe

Serves: 6-8 | Prep Time: 15 minutes | Cook Time: 20 minutes | Chill Time: 1-2 hours

Ingredients

For the Salad:

  • 2 lbs (900g) potatoes (Yukon Gold or red potatoes work best)
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup dill pickles or relish, finely chopped (optional)
  • 3 hard-boiled eggs, chopped
  • 1 tbsp fresh parsley or dill, finely chopped (optional)

For the Dressing:

  • 3/4 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tbsp yellow mustard (or Dijon for a tangier flavor)
  • 1 tbsp apple cider vinegar (or white vinegar)
  • 1 tsp sugar (balances flavors)
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp paprika (optional, for color and a mild smoky flavor)

Instructions

1. Cook the Potatoes

  • Wash, peel (if desired), and cut potatoes into bite-sized cubes.
  • Place them in a large pot of cold, salted water.
  • Bring to a boil over medium-high heat and cook for 10-15 minutes until fork-tender but not mushy.
  • Drain and let cool slightly.

2. Prepare the Dressing

  • In a large mixing bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, pepper, and paprika.
  • Taste and adjust seasoning if needed.

3. Assemble the Salad

  • Add the chopped celery, red onion, pickles, and eggs to the dressing.
  • Gently fold in the cooked potatoes while they are still slightly warm (this helps absorb flavors).
  • Sprinkle in fresh parsley or dill for extra freshness.

4. Chill & Serve

  • Cover and refrigerate for at least 1-2 hours (or overnight for best flavor).
  • Serve chilled or at room temperature.
