Here’s a detailed and delicious recipe for Vegetarian Lasagna:
Ingredients
For the Vegetables:
- 2 tbsp olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 bell pepper (red or yellow), diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 1 cup grated carrots
- Salt and pepper to taste
- 1 tsp Italian seasoning
- ½ tsp red chili flakes (optional)
For the Tomato Sauce:
- 2 cans (400g each) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp sugar (optional, to reduce acidity)
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil (optional)
For the Cheese Mixture:
- 2 cups ricotta cheese (or cottage cheese)
- 1 cup spinach, finely chopped
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
For the Assembly:
- 12 lasagna sheets (pre-cooked or regular)
- 2 cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated

Instructions
Step 1: Prepare the Vegetables
- Heat olive oil in a large pan over medium heat.
- Add diced onions and garlic; sauté until fragrant and translucent.
- Stir in bell pepper, zucchini, mushrooms, and carrots. Cook for 5-7 minutes until softened.
- Add spinach, Italian seasoning, red chili flakes, salt, and pepper. Cook for 2 minutes until spinach wilts.
- Remove from heat and set aside.
Step 2: Make the Tomato Sauce
- In the same pan, add crushed tomatoes and tomato paste.
- Stir in basil, oregano, salt, and pepper.

- Finish with a top layer of lasagna sheets, sauce, and a final layer of mozzarella and Parmesan cheese.
Step 5: Bake the Lasagna
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes until the top is golden and bubbling.
- Let the lasagna rest for 10 minutes before serving.
