Here’s a detailed and delicious recipe for Vegetarian Lasagna:

Ingredients

For the Vegetables:

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper (red or yellow), diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 1 cup grated carrots
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • ½ tsp red chili flakes (optional)

For the Tomato Sauce:

  • 2 cans (400g each) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp sugar (optional, to reduce acidity)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil (optional)

For the Cheese Mixture:

  • 2 cups ricotta cheese (or cottage cheese)
  • 1 cup spinach, finely chopped
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

For the Assembly:

  • 12 lasagna sheets (pre-cooked or regular)
  • 2 cups mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated

Instructions

Step 1: Prepare the Vegetables

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced onions and garlic; sauté until fragrant and translucent.
  3. Stir in bell pepper, zucchini, mushrooms, and carrots. Cook for 5-7 minutes until softened.
  4. Add spinach, Italian seasoning, red chili flakes, salt, and pepper. Cook for 2 minutes until spinach wilts.
  5. Remove from heat and set aside.

Step 2: Make the Tomato Sauce

  1. In the same pan, add crushed tomatoes and tomato paste.
  2. Stir in basil, oregano, salt, and pepper.
  3. Simmer on low heat for 15 minutes, stirring occasionally.
  4. Taste and adjust seasoning if necessary. Add a pinch of sugar if the sauce is too acidic.
  5. Remove from heat and set aside.

Step 3: Prepare the Cheese Mixture

  1. In a bowl, combine ricotta cheese, chopped spinach, grated Parmesan, , salt, and pepper.
  2. Mix until well blended.

Step 4: Assemble the Lasagna

  1. Preheat your oven to 375°F (190°C).
  2. Spread a thin layer of tomato sauce on the bottom of a 9×13-inch baking dish.
  3. Lay down 3-4 lasagna sheets to cover the base.
  4. Spread a portion of the cheese mixture over the sheets.
  5. Top with sautéed vegetables and a generous layer of tomato sauce.
  6. Sprinkle mozzarella cheese evenly over the layer.
  7. Repeat the layers: lasagna sheets, cheese mixture, vegetables, tomato sauce, and mozzarella.
  8. Finish with a top layer of lasagna sheets, sauce, and a final layer of mozzarella and Parmesan cheese.

Step 5: Bake the Lasagna

  1. Cover the dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the top is golden and bubbling.
  3. Let the lasagna rest for 10 minutes before serving.
