  • 1 cup besan (gram flour)
  • ½ cup water (adjust for consistency)
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon cumin seeds
  • ½ teaspoon ajwain (carom seeds) (optional, aids digestion)
  • 1 small onion (finely chopped)
  • 1 small tomato (finely chopped)
  • ½ cup spinach or coriander leaves (chopped)
  • 1 green chili (finely chopped)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon ginger-garlic paste (optional)
  • 1 tablespoon curd (optional, makes chilla softer)
  • Oil or ghee (for cooking)

Instructions:

Step 1: Prepare the Batter

  1. In a mixing bowl, add besan, turmeric, red chili powder, cumin seeds, ajwain, and salt.
  2. Gradually add water while whisking to form a smooth, lump-free batter.
  3. Add chopped onion, tomato, green chili, coriander leaves, and spinach.
  4. Optionally, add curd and mix well.
  5. Let the batter rest for 5–10 minutes.

Step 2: Cook the Chilla

  1. Heat a non-stick or cast-iron tawa (griddle) on medium flame.
  2. Grease it lightly with oil or ghee.
  3. Pour a ladleful of batter onto the tawa and spread it in a circular motion to form a thin pancake.
  4. Drizzle a few drops of oil around the edges.
  5. Cook on medium flame for 2–3 minutes until the edges lift slightly.
  6. Flip it gently and cook the other side for another 1–2 minutes until golden brown.

Step 3: Serve

  • Serve hot with mint chutney, tomato ketchup, or curd.
  • Enjoy with masala chai for a delicious breakfast or snack!
