Here’s a detailed step-by-step recipe to make delicious Mumbai-style Pav Bhaji at home:


Ingredients

For Bhaji (Vegetable Curry)

  • Vegetables:
    • 2 cups potatoes (peeled and diced)
    • 1 cup cauliflower florets
    • ½ cup green peas
    • 1 cup chopped carrots
    • ½ cup capsicum (finely chopped)
  • Spices:
    • 2 tsp pav bhaji masala
    • 1 tsp red chili powder (adjust to taste)
    • ½ tsp turmeric powder
    • Salt to taste
  • Other Ingredients:
    • 2 tbsp oil
    • 2 tbsp butter (for a rich flavor)
    • 1 large onion (finely chopped)
    • 1 large tomato (finely chopped or pureed)
    • 1 tsp ginger-garlic paste
    • ½ lemon (for serving)
    • Fresh coriander leaves (for garnish)

For Pav (Bread Rolls)

  • 8 pav buns
  • 2 tbsp butter
  • ½ tsp pav bhaji masala (for toasting the buns)

Instructions

Step 1: Boil the Vegetables

  1. In a pressure cooker, add potatoes, cauliflower, green peas, and carrots.
  2. Add enough water to cover the vegetables. Pressure cook for 3-4 whistles.
  3. Once cooled, mash the vegetables until smooth. Keep aside.

Step 2: Prepare the Bhaji (Vegetable Curry)

  1. Heat 2 tbsp oil and 1 tbsp butter in a deep pan or kadai.
  2. Add finely chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a minute until fragrant.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric, red chili powder, and pav bhaji masala. Mix well.
  6. Add the mashed vegetables to the pan and mix thoroughly.
  7. Add 1 cup water (or as needed) to achieve a thick consistency.
  8. Simmer on medium heat for 10 minutes, stirring occasionally.
  9. Add butter and check the seasoning. Adjust salt and spices if needed.
  10. Garnish with chopped coriander leaves.

Step 3: Toast the Pav (Bread Rolls)

  1. Heat a flat pan and add butter. Sprinkle a pinch of pav bhaji masala over the butter.
  2. Slice the pav buns and place them on the pan. Toast until golden and crispy.
