Pancakes Recipe
Ingredients:
- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tbsp sugar
- ½ tsp salt
- 1 ¼ cups milk (use dairy or plant-based milk like almond, oat, or soy)
- 3 tbsp melted butter or vegetable oil (plus extra for cooking)
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar or lemon juice (to react with the baking powder)

Instructions:
- Prepare the Wet Ingredients:
- In a small bowl, mix the milk with the apple cider vinegar or lemon juice. Stir and let it sit for 5 minutes to “sour” the milk. This step helps mimic the tanginess of buttermilk, adding a nice flavor to your pancakes.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until everything is well combined.
- Combine Wet and Dry Ingredients:
- Add the milk mixture (after it has rested for 5 minutes), melted butter (or oil), and vanilla extract to the dry ingredients. Stir gently with a spatula or whisk until combined. Be careful not to overmix—the batter should still be a little lumpy. Overmixing could result in dense pancakes.
- Heat the Pan:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface. You can test the heat by sprinkling a drop of water onto the pan—if it sizzles, the pan is ready.
- Cook the Pancakes:
- Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until small bubbles appear on the surface of the pancake. Flip the pancake carefully and cook for another 1-2 minutes, until both sides are golden brown.
- Serve:
