Ingredients:

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 ¼ cups milk (use dairy or plant-based milk like almond, oat, or soy)
  • 3 tbsp melted butter or vegetable oil (plus extra for cooking)
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar or lemon juice (to react with the baking powder)

Instructions:

  1. Prepare the Wet Ingredients:
    • In a small bowl, mix the milk with the apple cider vinegar or lemon juice. Stir and let it sit for 5 minutes to “sour” the milk. This step helps mimic the tanginess of buttermilk, adding a nice flavor to your pancakes.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, sugar, and salt until everything is well combined.
  3. Combine Wet and Dry Ingredients:
    • Add the milk mixture (after it has rested for 5 minutes), melted butter (or oil), and vanilla extract to the dry ingredients. Stir gently with a spatula or whisk until combined. Be careful not to overmix—the batter should still be a little lumpy. Overmixing could result in dense pancakes.
  4. Heat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface. You can test the heat by sprinkling a drop of water onto the pan—if it sizzles, the pan is ready.
  5. Cook the Pancakes:
    • Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until small bubbles appear on the surface of the pancake. Flip the pancake carefully and cook for another 1-2 minutes, until both sides are golden brown.
  6. Serve:
    • Stack the pancakes on a plate and serve hot with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.

Tips:

  • If you prefer thicker pancakes, you can reduce the amount of milk slightly. If the batter is too thick, add a little more milk to reach your desired consistency.
  • For added flavor, try mixing in cinnamon, nutmeg, or a handful of chocolate chips.
  • You can also substitute the butter with a plant-based butter or oil for a vegan-friendly version.
