Homemade Stir-Fried Noodles Recipe

Ingredients:

For the Noodles:

  • 200g noodles ( wheat noodles, rice noodles, or instant noodles)
  • 4 cups water
  • 1 teaspoon salt
  • 1 teaspoon oil

For the Stir-Fry:

  • 2 tablespoons oil (vegetable, sesame, or peanut oil)
  • 3 cloves garlic (minced)
  • 1-inch ginger (grated or finely chopped)
  • ½ onion (sliced)
  • 1 small carrot (julienned or thinly sliced)
  • ½ cup bell peppers (sliced, any color)
  • ½ cup cabbage (shredded)
  • ½ cup mushrooms (optional, sliced)
  • ½ cup protein ( tofu, or paneer)

For the Sauce:

  • 2 tablespoons soy sauce (light or dark)
  • 1 tablespoon oyster sauce (optional, for extra flavor)
  • 1 teaspoon vinegar (rice vinegar or white vinegar)
  • 1 teaspoon chili sauce (adjust to spice preference)
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust as needed)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional for a thicker sauce)

For Garnishing:

  • Spring onions (chopped)
  • Sesame seeds
  • Crushed peanuts (optional)

Instructions:

Step 1: Boil the Noodles

  1. Boil 4 cups of water in a pot. Add 1 teaspoon salt and 1 teaspoon oil.
  2. Add the noodles and cook as per package instructions (usually 4-5 minutes).
  3. Once cooked, drain the noodles and rinse them under cold water to prevent sticking. Set aside.

Step 2: Prepare the Sauce

  1. In a small bowl, mix soy sauce, oyster sauce, vinegar, chili sauce, sugar, black pepper, and salt.
  2. If using cornstarch, mix it separately with 2 tablespoons of water and add it to the sauce. Stir well.

Step 3: Stir-Fry the Vegetables and Protein

  1. Heat 2 tablespoons of oil in a pan or wok over medium-high heat.
  2. Add minced garlic and ginger. Sauté for a few seconds until fragrant.
  3. Add sliced onions and stir-fry until slightly translucent.
  4. Add your choice of protein paneer) and cook until done.
  5. Toss in the carrots, bell peppers, cabbage, and mushrooms. Stir-fry for 2-3 minutes until slightly tender but still crunchy.

Step 4: Add Noodles and Sauce

  1. Add the boiled noodles to the pan. Toss everything together.
  2. Pour the prepared sauce over the noodles and mix well so that everything is coated evenly.
  3. Stir-fry for another 2-3 minutes. Adjust seasoning if needed.

Step 5: Garnish and Serve

  1. Turn off the heat and garnish with chopped spring onions, sesame seeds, and crushed peanuts.
  2. Serve hot and enjoy your homemade stir-fried noodles!
