Thecha Recipe Thecha is a fiery and flavorful chutney from Maharashtra, India, traditionally served with Bhakri (jowar or bajra flatbread) and a dollop of ghee. It’s made with green chilies, garlic, and peanuts, giving it a smoky, spicy, and nutty taste.
Ingredients:
- 15-20 green chilies (spicy variety like Thai green chilies or medium-spicy ones)
- 6-8 garlic cloves (peeled)
- 1/4 cup roasted peanuts
- 2 tbsp oil (preferably peanut or mustard oil)
- 1/2 tsp cumin seeds
- 1/2 tsp salt (adjust to taste)
- 2 tbsp chopped coriander leaves (optional, for freshness)
- 1/2 tsp lemon juice (optional, for a tangy twist)

Instructions:
Step 1: Roasting the Ingredients
- Heat oil in a pan on medium heat.
- Add cumin seeds and let them splutter.
- Add garlic cloves and sauté for 30 seconds until fragrant.
- Add green chilies and roast them for 3-4 minutes, stirring occasionally, until they get slightly blistered and soft.
- Add roasted peanuts and mix well. Cook for another minute, then turn off the heat.
Step 2: Grinding the Thecha
- Transfer the roasted chilies, garlic, and peanuts to a mortar-pestle (traditional method) or a grinder.
- Add salt and crush or pulse the mixture until coarse (do not make it into a smooth paste; thecha should have some texture).
- Optionally, mix in chopped coriander leaves and lemon juice for added freshness.
Step 3: Serving & Storage
- Serve immediately with Bhakri, chapati, or as a side with dal-rice.
- Store in an airtight container in the refrigerator for up to 3-4 days.
