
Lemon Drizzle Cake Recipe
This moist and zesty lemon drizzle cake is perfectly sweet and refreshing — and completely Great for vegans.
Ingredients (Serves 8-10)
Cake:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) vegetable oil (sunflower or light olive oil works well)
- ¾ cup (180ml) plant-based milk (almond, soy, or oat)
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp lemon zest (about 1 large lemon)
- 1 tsp vanilla extract
- ¼ tsp salt
Lemon Drizzle:
- ¼ cup (60ml) freshly squeezed lemon juice
- ½ cup (100g) granulated sugar
Glaze (Optional):
- ¾ cup (90g) powdered sugar
- 1-2 tbsp lemon juice (to desired consistency)

Instructions
Step 1: Preheat Oven
- Preheat your oven to 350°F (180°C).
- Grease and line a 9×5-inch (23x13cm) loaf pan with parchment paper.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
Step 3: Combine Wet Ingredients
- In a separate bowl, mix the plant-based milk, vegetable oil, lemon juice, lemon zest, and vanilla extract.
Step 4: Create the Batter
- Gradually pour the wet mixture into the dry ingredients.
- Gently fold until just combined (avoid overmixing).
Step 5: Bake
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until a skewer inserted in the center comes out clean.
Step 6: Prepare Lemon Drizzle
- While the cake is baking, mix the lemon juice and sugar in a small bowl until the sugar dissolves.
Step 7: Drizzle the Cake
- Once the cake is out of the oven, poke holes all over the top using a skewer.
- Slowly pour the lemon drizzle over the warm cake, allowing it to soak in.
Step 8: Cool and Glaze (Optional)
- Let the cake cool completely in the pan.
- If desired, mix the powdered sugar and lemon juice to create a thick glaze. Drizzle it over the cooled cake.
